Quick and Easy No Bake Energy Bites

Today's recipe is a super yummy and healthy treat for the whole family- No Bake Energy Bites. As you all know, I'm a fan of keeping it simple, and this recipe couldn't get more simple if I tried. It involves absolutely no baking, which makes it a fantastic treat to make with your toddlers during the summer. Because who actually likes having to turn on the stove or oven in the oven? If you live in the South, you know what I'm talking about...




I'm sure at first glance these energy bites don't exactly look appetizing, but in actuality, they taste like chocolate chip cookie dough. They're also packed with enough protein to keep you energized enough to take on the day. Plus these yummy little morsels are perfect appetizers for parties or even a family movie night. They're just as versatile as they are yummy. Which makes them the perfect treat for both adults and children.

Ingredients


1/2 cup natural peanut butter
1/4 cup cocoa powder
2 tsp. water
1 cup rolled oats
1/4 cup dark chocolate chips (I buy organic)
1/2 cup cashews

 Instructions 

1. In your food processor, pulse 1/2 of the cashews until medium ground and set aside.
2. Next, add peanut butter, cocoa powder, protein powder, chocolate chips and the remaining 1/2 of the cashews. Pulse together until well blended.
3.In a medium bowl, add oats and mixture from food processor until ready to form into balls. Add water as needed.
4. Keep refrigerated until you are ready to eat, and then serve your  No Bake Energy Bites with a smile.

The best thing about this recipe is how easy it is to add to. You can literally add any ingredient you can think of (except for maybe ketchup) and it will taste amazing. I've made these several times using chia and flax seeds and they taste just as amazing. Plus you get the added bonus of the MANY health benefits of chia and flax seeds. Have fun, mix it up a bit. The more you personalize and make it your own, the more likely you are to create something that both you and your family will LOVE to make.
